CHICKEN AND CABBAGE SALAD

Preparation Method :

  • Cut the cabbage in halves lengthwise, wash in cold water and shake out all the water.
  • Place Cut surface down on a wooden board and, with a sharp knife, cut across into very thin slice and chill.
  • Gently simmer the chicken fillets until tender with just enough water to cover, add salt and pepper to taste. Do not overcook. Allow to cool in liquid.
  • Sprinkle the onion with salt and leave for 10 minutes, then rinse under cold water, squeezing out the juices. Add half the sugar and mix.
  • Combine the remaining sugar, fish sauce, lime juice and vinegar. Slice cooled chicken finely.
  • Just before serving combine all the ingredients including mint and coriander and toss well.

INGREDIENTS

  • Half a Chinese white cabbage
  • 500 grams chicken thigh fillets
  • Salt and pepper to taste
  • 1 medium onion, sliced thinly
  • 2 tablespoons sugar
  • 2 tablespoons fish sauce
  • 3 tablespoons lime juice
  • 1 tablespoon white wine vinegar
  • 100 grams chopped mint
  • 50 grams chopped coriander
