Preparation Method :
- Arrange the orange pieces in a serving dish with the beetroot.
- The Dressing: Add all the ingredients except oil, pepper and salt to the bowl containing the orange juice. Whisk to mix, then gradually whisk in the oil.
- Taste and adjust seasoning with salt and pepper. Pour the dressing over the salad, garnish with the watercress and serve.
INGREDIENTS
- 350 grams cooked beetroot batons
- 1 tablespoon wine vinegar
- 1 teaspoon lemon juice
- Pinch of sugar
- 1 small garlic clove, crushed
- 3 oranges, Peeled, pith removed, catch the juice, flesh removed and cut the segments in half
- ¼ teaspoon mustard powder
- 1 tablespoon chopped mixed herbs
- 50 ml Cooking oil
- Salt and pepper, to taste
- Watercress sprigs, to garnish
