- Heat half the oil in a pan and gently fry the garlic and onion until soft, stirring often. Do not let them brown.
- Add the tomatoes, parsley and sugar to the pan and continue cooking and stirring until the tomatoes are soft, about 5 minutes.
- Mix the beans with the tomato mixture, turn into a serving bowl, cool and chill. Just before serving, whisk together the remaining oil and vinegar with salt and pepper to taste and add to the beans.
- Sprinkle with the chopped spring onions (scallions) and serve.

- 2 onion, finely chopped
- 4 ripe tomatoes, skinned and chopped
- 30 gram parsley, chopped
- 1 teaspoon sugar
- 700 gram butter beans, cooked
- 2 tablespoon wine vinegar
- Salt and freshly ground pepper
- 6 springs onions, finely chopped (including green tops)
