- Prepare the peppers. Heat the grill to medium and grill the peppers all over until the outer skin is blackened.
- Remove the peppers from the heat and allow them to cool slightly before wrapping in clingfilm while they are still warm.
- Leave to stand for about 10-12 minutes, then unwrap. Rub off the charred outer skin under running cold water using a clean, new scouring pad.
- The surface flesh of the roasted, skinned peppers will probably be brownish in colour.
- Cut the pepper in half and remove all the inner seeds and membranes, then cut the flesh into thin strips and set them aside.
- Melt the butter in a large saucepan and fry onion and garlic gently until the onion is soft and transparent, then add peppers.
- Stir gently over a low heat for about 5 minutes, then add the rice. Mix together until the rice is shiny and very hot.
- Now add the first ladleful of hot stock and stir until the rice has absorbed all the liquid.
- Continue in this way, gradually add 2 ladlefuls of stock at a time and stir it in before adding more.
- When the rice is tender but still firm to the bite, season to taste and add Parmigiano Reggiano.
- Remove the pan from the heat, cover and leave to stand for about 5 minutes before transferring to a warmed platter to serve.

- 100 grams unsalted butter
- 1 onion, finely chopped
- 1-2 garlic cloves, (crushed)
- 500 grams risotto rice
- 2 litres vegetable or chicken stock, kept simmering
- 100 grams freshly grated Parmigiano Reggiano
- Freshly milled black pepper and Salt
