Preparation Method :
- Melt half the butter in a large pan and gently fry the onion and celery until they are soft. Add the meat to the pan and brown all over.
- Add the lemon zest and juice, stir again and then add the wine. Season and simmer everything together basting with the hot stock if necessary, until the meat is tender.
- Add the rice and stir thoroughly heating until the rice is crackling hot.
- Start adding the stock a ladleful at a time, stir constantly, until all the liquid is absorbed.
- Continue to cook the rice in this way, making sure that the rice always absorbs the stock before you add more liquid.
- When the risotto is tender and creamy, but the rice is firm to the bite, take the pan off the heat.
- Check the seasoning and stir in the remaining butter, cream and cheese. Stir thoroughly and cover.
- Leave to rest for 5 minutes, then transfer onto a warmed platter, sprinkle with the parsley and serve at once.

- 100 grams unsalted butter
- 1 onion, chopped
- 1 celery stick, chopped
- 400 grams boned and cubed chicken, turkey or rabbit
- Juice and zest of ½ lemon
- 100 ml dry white wine
- 400 grams risotto rice
- 2 litres chicken stock, (kept simmering)
- 5 tablespoons single (light) cream
- 50 grams freshly grated Parmigiano Reggiano
- 2 teaspoons chopped fresh parsley
- Freshly milled black pepper and Salt
