HERB RISOTTO

- Heat the oil in a heavy saucepan and cook the shallot until soft. Add the rice to the pan and stir around until coated with oil, then pour on the stock. Cover the pan and simmer gently until almost all the liquid is absorbed.
- Add the saffron, bay leaf and fresh herbs to the stock and pour it over the rice. Cover again, and cook gently until the stock is absorbed.
- If the rice is tender, season with salt and pepper and serve; otherwise add the remaining stock and continue to simmer until cooked.

- 20 tarragon leaves, finely chopped
- 20 marjoram leaves, finely chopped
