Preparation Method :
- Put the cooked rice in a bowl. Cover with a damp napkin and heat for a minute on High until hot. Stir in the yogurt and milk. Allow to cool.
- Heat the oil in a small non-stick saucepan and fry the mustard seeds, lentils, curry leaves and chillies until it change colour.
- Stir into the rice with the roasted peanuts and the seasoning. Allow to cool, discard the chillies and serve chilled.
INGREDIENTS
- 150 grams cooked rice
- 2 tablespoon semi-skimmed milk
- 50 ml low-fat yogurt, beaten
- 1 teaspoon Cooking oil
- ½ teaspoon brown mustard seeds
- 1 teaspoon skinned and split black gram
- 1-2 dried red chillies, whole
- 1 teaspoon chopped roasted peanuts
- Few fresh curry leaves
- Freshly ground black pepper and salt to taste
