VEGAN RICE WITH DRIED FRUITS

Preparation Method :

  • Heat the oil in a large pan. Add the onion and cook for 3 minutes.
  • Add the apricots or nectarines, prunes, sultanas, raisins and apple or orange juice, blending well. Cook for 5 minutes, stirring occasionally.
  • Add the bananas, walnuts, pine nuts, honey, rice, water, and salt and pepper to taste.
  • Bring to the boil, reduce the heat, cover and simmer until the rice is tender, about 25 to 30 minutes.
  • Stir in the apple and cook gently to reheat.
  • Spoon into a warmed serving dish. 

INGREDIENTS

  • 8 tablespoons Cooking oil
  • 2 tablespoon chopped onion 
  • 150 grams dried apricots or nectarines, soaked overnight and chopped
  • 150 grams dried prunes, soaked overnight and chopped 
  • 100 grams sultanas
  • 50 grams raisins
  • 300 ml apple or orange juice
  • 4 large bananas, peeled and sliced 
  • 150 grams walnut pieces
  • 50 grams pine nuts 
  • 2 tablespoon clear honey 
  • 500 grams brown rice, well washed 
  • 1 liter water 
  • Salt
  • Freshly ground black pepper 
  • 2 red dessert apple, cored and chopped
