VEGAN RICE WITH DRIED FRUITS
Preparation Method :
- Heat the oil in a large pan. Add the onion and cook for 3 minutes.
- Add the apricots or nectarines, prunes, sultanas, raisins and apple or orange juice, blending well. Cook for 5 minutes, stirring occasionally.
- Add the bananas, walnuts, pine nuts, honey, rice, water, and salt and pepper to taste.
- Bring to the boil, reduce the heat, cover and simmer until the rice is tender, about 25 to 30 minutes.
- Stir in the apple and cook gently to reheat.
- Spoon into a warmed serving dish.
INGREDIENTS
- 8 tablespoons Cooking oil
- 2 tablespoon chopped onion
- 150 grams dried apricots or nectarines, soaked overnight and chopped
- 150 grams dried prunes, soaked overnight and chopped
- 100 grams sultanas
- 50 grams raisins
- 300 ml apple or orange juice
- 4 large bananas, peeled and sliced
- 150 grams walnut pieces
- 50 grams pine nuts
- 2 tablespoon clear honey
- 500 grams brown rice, well washed
- 1 liter water
- Salt
- Freshly ground black pepper
- 2 red dessert apple, cored and chopped
