MUSHROOM RICE

Preparation Method :

  • Melt half the butter in a heavy-based saucepan over a medium heat and add the spices.
  • In a separate pan melt the remaining butter, add the mushrooms and fry until golden brown. Remove from the pan and set aside.
  • Add the onion and garlic to the spices, fry until golden brown. Add the drained rice, cook over a medium heat and stir until it has softened slightly, about 3-5 minutes.
  • Add the garam masala and stir. Add the vegetable stock and half of the mushroom mix, then cook the rice over a low heat for about 10-12 minutes or until the rice is cooked.
  • Finally layer the mushroom mixture. Remove the bay leaves, before serving and finish with the fresh coriander and parsley.

INGREDIENTS

  • 225 grams, basmati rice, washed, soaked and drained
  • 400 ml  vegetable stock
  • 100 grams button mushrooms, roughly chopped
  • 2 tablespoon butter
  • 1 onion, finely chopped
  • 2-3 garlic cloves, crushed
  • Fresh coriander, roughly chopped
  • Fresh flat leaf parsley, chopped

Whole Spices

  • 3-4 cloves
  • 1-2 bay leaves
  • 1 teaspoon cumin seeds

Ground Spices

  • ½ teaspoon garam masala
