Preparation Method :
- In a bowl, beat the eggs well, and season to taste with salt and ground black pepper.
- Heat 1 tablespoon of the vegetable oil in a large pan, pour in the eggs and allow them to set, at least for half a minute.
- Roll up the pancake and then cut it into thin strips and serve hot.
- Heat the remaining vegetable oil in the wok, add the shallots, chopped ginger, garlic and prawn tails and cook gently for about a minute or two.
- Keep stirring and make sure that the garlic doesn't burn.
- Add the chilli sauce, spring onions, peas, pork and soy sauce. Stir to heat through, add the rice.
- Fry the rice over a moderate heat for 5 minutes. Transfer into a warmed serving dish and decorate with the pancake.

- 220 grams peeled prawn tails, cooked
- 220 grams frozen peas, thawed
- 350 grams long grain rice, cooked, and allowed to cool completely
- 225 grams thickly sliced roast pork, diced
- 2 eggs
- 3 tablespoon Cooking oil
- 4 shallots, finely chopped
- 1 teaspoon grated fresh root ginger
- 1 garlic clove, crushed
- 2 teaspoon chilli sauce
- 4 scallions, green part only, roughly chopped
- 3 tablespoon light soy sauce
- Salt and ground black pepper, to taste
