LEMON RICE

Preparation Method :

  • Heat the butter or ghee in a heavy-based saucepan and add the whole spices, followed by the lentils and black pepper to taste. Fry for a minute.
  • Add the rice, ginger, lemon juice, the ground spices and 1 litre water. Adjust seasoning with salt to taste.
  • Stir gently and bring to the boil for about 5 minutes. Partially cover and simmer until the rice grains are just tender. Fully cover and reduce the heat to minimum for 10 minutes.
  • Remove from the heat and leave to rest without lifting the lid for 10-12 minutes before serving.
  • Fluff up the rice with a fork before transferring to a serving dish.

INGREDIENTS

  • 500 grams basmati rice, washed, soaked and drained
  • 50 grams unsalted butter or ghee
  • 30 grams yellow split chickpeas, washed, soaked and drained  
  • ½ inch piece of ginger, peeled and left whole
  • Juice of 2 lemons
  • Salt and freshly ground black pepper, to taste

Ground Spices

  • ½ teaspoon garam masala
  • ½ teaspoon turmeric powder

Whole Spices

  • 2-3 cardamom pods, crushed
  • 2 inch cinnamon stick
  • 1-2 bay leaves
  • 1-2 cloves
  • ½ teaspoon cumin seeds
