Preparation Method :
- Heat the butter or ghee in a heavy-based saucepan and add the whole spices, followed by the lentils and black pepper to taste. Fry for a minute.
- Add the rice, ginger, lemon juice, the ground spices and 1 litre water. Adjust seasoning with salt to taste.
- Stir gently and bring to the boil for about 5 minutes. Partially cover and simmer until the rice grains are just tender. Fully cover and reduce the heat to minimum for 10 minutes.
- Remove from the heat and leave to rest without lifting the lid for 10-12 minutes before serving.
- Fluff up the rice with a fork before transferring to a serving dish.

- 30 grams yellow split chickpeas, washed, soaked and drained
- ½ inch piece of ginger, peeled and left whole
- Juice of 2 lemons

- ½ teaspoon garam masala
- ½ teaspoon turmeric powder
Whole Spices
- 2-3 cardamom pods, crushed
- 2 inch cinnamon stick
- 1-2 bay leaves
- 1-2 cloves
- ½ teaspoon cumin seeds
