LAMB AND RICE COOKED IN SPICES

Cooking Time :
45 minutes

Preparation Method :

  • Heat the oil in a deep pan; add onions and saute until light brown. Reduce heat to low and add the yoghurt and spice mixture. Mix well and continue to fry until the yoghurt is absorbed.
  • Add the lamb and salt. Add enough water so that all is absorbed when the lamb is tender. Cook over low heat until the lamb is tender.
  • Add the drained rice and stir slowly to mix well.
  • Add water and bring to the boil. Reduce heat and cook until the rice is tender and fluffy and all the water is absorbed.
  • Mix well and serve garnished with green coriander and green chillies.

 

INGREDIENTS

  • 400 grams Basmati Rice, soaked and drained
  • 250 grams Lamb, cut into 1" cubes
  • 125 ml IDHAYAM sesame oil
  • 200 grams Onions, sliced
  • Salt to taste

Grind to a paste and mix with 50 ml yoghurt:

  • 1 teaspoon Coriander powder
  • 1 teaspoon Cumin powder
  • ¼ teaspoon Turmeric powder
  • 1 teaspoon Red chilli powder
  • ½ tablespoon Ginger, chopped
  • ½ tablespoon Garlic, chopped
  • ½ tablespoon Green coriander, chopped
  • 2 Green chillies slit
