- Beat the eggs with salt, pepper and water and make omelettes in a frying pan. Roll up each omelette and cut into strips when cold. Set aside.
- Put the meat, prawns and chicken pieces in separate bowls.
- Drop the shrimp paste with the remaining chilli, garlic and onion in a food processor and process to a paste.
- Fry the paste in the remaining hot oil, until it gives off the spicy aroma.
- Add the strips of pork or beef and fry over to coat in the juices. Stir constantly to prevent the meat sticking to the bottom of the pan.
- Add the prawns, cook for about a minute and then add in the chicken with cold rice, dark soy sauce and adjust seasoning to taste.
- Stir constantly to keep the rice fluffy and make sure not to stick to the base of the pan.
- Transfer on to a hot platter and garnish with the omelette strips, celery leaves, reserved shredded fresh chilli and coriander sprigs.

- 220 grams, pork fillet or beef fillet, Cut into strips
- 150 grams, peeled, cooked shrimp
- 225 grams cooked chicken, chopped
- 345 grams dry weight long grain rice, cooked and allowed to cool completely.
- 2 tablespoon water
- 100 ml Cooking oil
- 4 fresh red chillies, seeded and sliced, Shred one chilli and reserve it
- 2 eggs
- 1 onion, sliced
- 2 tablespoon dark soy sauce
- ½ inch cube shrimp paste
- 3 garlic cloves, crushed
- Salt and ground black pepper, to taste
- Celery leaves, fresh coriander sprigs, to garnish
