FRIED RICE WITH GREEN GRAM DUMPLINGS

Preparation Method :

  • Soak the rice for 10 minutes.
  • Heat 2 tablespoon oil in a kadhai; shallow fry the dried green gram dumplings on medium heat for 2-3 minutes. Remove and drain the excess oil on absorbent kitchen towels and keep aside.
  • Heat the remaining oil in a pan; add green and black cardamoms, cloves, cinnamon sticks, bay leaves, and cumin seeds. Saute on medium heat till the seeds crackle.
  • Add rice (drained) and dried green gram dumplings. Stir gently, add salt and water.
  • Bring to the boil and then lower heat. Cook until the liquid dries, stirring occasionally, very gently.
  • Serve garnished with fried onion slices.

 

INGREDIENTS

  • 600 grams Rice, Basmati
  • 250 grams Dried green gram dumplings
  • 250 ml IDHAYAM sesame oil
  • 5 Green cardamoms  
  • 2 Black cardamoms  
  • 5 Cloves  
  • 2 Cinnamon, 1" sticks
  • 2 Bay leaves  
  • ½ teaspoon Cumin seeds
  • Salt to taste
  • 1 Onion, sliced, fried
