CURRIED RICE

Curried Rice mainly consist of ingredients; peppercorns, chicken stock, curry powder, onions, margarine, whole cloves, cinnamon, salt, chicken stock and long-grain rice! Seeing all these ingredients mixed into one can turn to a Curried Rice! This is such a perfect meal for everyone who wants to make a change!

40 minutes

Preparation Method :

  • Heat the oil in a large heavy saucepan or flameproof casserole. Sauté half the onions until golden brown, then add the turmeric and curry powder and stir well for a minute.
  • Add the rice and fry for a few minutes, stirring, until golden in colour. Add boiling stock, peppercorns, spices, salt and remaining onions.
  • Stir well, cover and cook over a gentle heat for about 20 minutes.
  • Turn off the heat and keep covered until ready to serve. A few minutes before serving, uncover the pan to allow the steam to escape. Fluff up with a fork and garnish with nuts and peas.
  • Serve Hot. 

INGREDIENTS

  • 200 ml IDHAYAM sesame oil
  • 6 onions, peeled and finely sliced
  • 4 teaspoons turmeric 
  • 8 teaspoons curry powder 
  • 2 kg long-grain rice
  • 2 liters chicken stock 
  • 20 peppercorns 
  • 8 whole cloves 
  • 15 cardamom pods, bruised 
  • 2 stick cinnamon 
  • 8 teaspoons salt

Garnish

  • Cashew nuts 
  • 500 grams cooked peas
