Preparation Method :
- Put the drained rice in a large pan with the coconut milk, water, coriander, cinnamon stick, lemon grass and pandan, bay leaf and salt.
- Cover and cook over a very low heat for about 15 minutes or until the coconut milk has been absorbed.
- Fork through and remove the lemon grass, cinnamon and bay leaf. Cover and cook for another 3 minutes.
- Cover and cook over the low flame for 5 more minutes.
- When the rice is ready, transfer to a warm serving dish and garnish with the coriander sprigs and crisp deep-fried Onions.

- 500 grams Thai fragrant rice, rinsed and drained
- 400 ml coconut milk
- 350 ml water
- ½ teaspoon ground coriander
- 3 cm piece cinnamon stick
- 1 lemon grass stalk, bruised
- 1 bay leaf
- Salt, to taste
- Fresh coriander sprigs and Deep-fried Onions, to garnish
