CARAMELIZED BASMATI RICE

Preparation Method :

  • Heat the oil in a large pan over medium heat. When the oil is hot, add the granulated sugar and stir until it is caramelized.
  • Reduce the heat to low and add in the spices and bay leaf, when it sizzles add the rice and salt. Fry gently, for about 2 minutes.
  • Pour in the water and bring to the boil. Let it boils reduce the heat to very low. Cover and cook for about 10 - 12 minutes.
  • Remove the rice from the heat and allow it stand for about 5 minutes. Fluff up the rice and transfer to a warm serving dish.

INGREDIENTS

  •  250 grams basmati rice, rinsed, soaked and drained
  • 500 ml hot water
  • 50 ml  Cooking oil
  • 2 tablespoon granulated sugar 
  • 1 inch piece cinnamon stick 
  • 6 cloves
  • 1 bay leaf, crumpled
  • 6 green cardamom pods, bruised 
  • Generous pinch of salt
