BROWN RICE WITH NUTS AND SPICES

Preparation Method :

  • Melt the margarine in a large saucepan and fry the nuts for 1 to 2 minutes until brown.
  • Add the onion, carrots, rice, garlic, spices and seasoning and fry for 2 minutes.
  • Stir in the raisins, chopped apple, consomme and wine, and simmer for 30 to 35 minutes.
  • Add the peas and cook for 1 minute, then sprinkle with the toasted nuts.

INGREDIENTS

  • 50 grams margarine 
  • 50 grams flaked almonds 
  • 50 grams cashew nuts
  • 2 onion, peeled and thinly sliced
  • 4 carrots, coarsely grated
  • 250 grams brown rice, well washed
  • 4 cloves garlic, peeled and thinly sliced
  • 2 teaspoon ground cumin
  • 2 teaspoon ground coriander
  • 2 teaspoon turmeric 
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cloves
  • Salt
  • Freshly ground black pepper 
  • 6 tablespoons raisins 
  • 2 eating apple, peeled, cored and chopped 
  • 500 ml consomme, diluted to make 1 liter
  • 300 ml dry white wine
  • 200 grams frozen peas
