VEGETABLE PULAO

Preparation Method :
- To make the pilaff, heat the oil in a saucepan and fry the onion for 5 minutes. Add the rice and cook, stirring, for 1 minute.
- Pour in the vegetable stock and add the remaining ingredients. Bring to the boil, stirring occasionally.
- Cover the pan and simmer gently for 15 to 20 minutes until the rice is cooked and all the stock has been absorbed.
- Meanwhile, prepare the vegetables. Heat the oil in a saucepan and fry the onion, garlic and courgettes for about 5 minutes, stirring occasionally until the vegetables are lightly browned.
- Add the pepper and peas and fry for 2 minutes. Add the tomatoes with the herbs, salt and pepper.
- Cook for 10 to 15 minutes, stirring occasionally until the tomatoes are reduced to a pulp and the courgettes are just tender.
- Transfer the pilaff to a warm serving dish and pour over the vegetables.
- Garnish with cashews and Serve hot.

Pilaff
- 2 tablespoon IDHAYAM Sesame Oil
- 2 onion, peeled and chopped
- 500 grams long-grain rice
- 1 liter vegetable stock
- 2 cinnamon stick
- 2 bay leaves
- Salt to taste
- Freshly ground black pepper
- 50 grams cashews, roasted
Vegetables
- 4 tablespoons IDHAYAM Sesame Oil
- 2 onion, peeled and sliced
- 2 clove garlic, peeled and crushed
- 1 kg courgettes, trimmed and sliced
- 2 green pepper, cored, deseeded and diced
- 200 grams Peas, wiped and trimmed
- 1 kg tomatoes, skinned and roughly chopped
- 2 tablespoon chopped fresh herbs
