Preparation Method :
- Grill the sausages on both sides until cooked through and the colour turns to golden brown; cut into chunks and set aside.
- Heat a large, heavy frying pan, drop the butter when melts, add the curry powder and spring onions.
- Stir over a low heat for about a minute, then add rice, sausages, eggs, half the parsley and the cream.
- Continue stirring until heated through. Season to taste with salt and black pepper.
- Spoon on to a heated serving dish, sprinkle remaining parsley over the top, and garnish with lemon wedges.
INGREDIENTS
- 2 teaspoon curry powder
- 4 spring onions, finely chopped
- 300 grams long-grain rice, cooked
- 500 grams sausages
- 3 tablespoon butter
- 2 hard-boiled eggs, quartered
- 5 tablespoon finely chopped Fresh parsley/ coriander
- 100 ml cream
- Salt and Freshly ground black pepper, to taste
- Lemon wedges, for garnish
