SAUSAGE PILAF

Preparation Method :

  • Grill the sausages on both sides until cooked through and the colour turns to golden brown; cut into chunks and set aside.
  • Heat a large, heavy frying pan, drop the butter when melts, add the curry powder and spring onions.
  • Stir over a low heat for about a minute, then add rice, sausages, eggs, half the parsley and the cream.
  • Continue stirring until heated through. Season to taste with salt and black pepper.
  • Spoon on to a heated serving dish, sprinkle remaining parsley over the top, and garnish with lemon wedges.

INGREDIENTS

  • 2 teaspoon curry powder
  • 4 spring onions, finely chopped
  • 300 grams long-grain rice, cooked
  • 500 grams sausages
  • 3 tablespoon butter
  • 2 hard-boiled eggs, quartered
  • 5 tablespoon finely chopped Fresh parsley/ coriander
  • 100 ml cream
  • Salt and Freshly ground black pepper, to taste
  • Lemon wedges, for garnish
