CUMIN PILAF WITH LAMB RIBS

Preparation Method :

  • Cook the ribs in water with green cardamom, cloves, cinnamon sticks, black peppercorns, and salt till it is tender. Strain the stock into another pan. Keep the ribs aside.
  • Heat the oil in a pan on low heat until the foam subsides. Add cumin seeds and saute for a few seconds. 
  • Increase heat, add the onions and saute till golden. Add the garam masala and the fine paste; cook until the water evaporates.
  • Add the cooked ribs and saute, adding a few tablespoons of water. Add the stock, topping up with warm water to make 5½ cups. 
  • Bring to a rapid boil and add the rice. Stir to mix well. Lower heat and cook covered until the rice is cooked and the stock is absorbed.

INGREDIENTS

  • 600 grams Basmati Rice, soaked and drained 
  • 1 kg Lamb ribs, double 
  • 5 Green cardamoms 
  • 5 Cloves 
  • 4 Cinnamon, 2" sticks 
  • 1 teaspoon Black peppercorns 
  • Salt to taste 
  • 200 ml IDHAYAM sesame oil 
  • 2 teaspoon Cumin seeds 
  • 3 Onions, medium-sized, sliced 
  • 1 ½ teaspoon Garam masala 

Make a fine paste with a little water: 

  • 4 teaspoon Garlic-ginger paste 
  • 12 Green chillies 
  • 2 tablespoon Green coriander, fresh 
  • 1 tablespoon Mint leaves, fresh
