BOKARI PILAFF

Bokari Pilaff is such a tempting and delicious dish you should not forget to prepare for your meal! Serving this at home can be self-fulfilling so right in an instant; you should prepare this at hand! It has its ingredients like ground black pepper, chicken livers, rice, turmeric, tomatoes, large onion, small leek, olive oil, frozen peas and mushrooms!

45 minutes

Preparation Method :

  • Season the chicken livers with salt and pepper. Heat the oil in a pan and fry the onion and leek until cooked but not brown. Stir in the rice, and fry until the rice turns white.
  • Mix the turmeric, tomatoes and parsley and add to the rice mixture. Pour on enough boiling stock to bring the liquid level 1inch above the top of the rice.
  • Cover the pan with a tight- fitting lid and cook, without lifting the lid, for 15 minutes.
  • Add the mushrooms, peas and seasoned livers; cover and continue to cook for 5 to 8 minutes. Season with salt and pepper to taste.
  • Transfer the rice mixture to a heated serving dish and garnish with tomato slices and sprigs of parsley.
  • Serve at once.  

INGREDIENTS

  • 1 kg chicken livers, washed and sinew removed
  • Salt
  • Freshly ground black pepper 
  • 2 tablespoon Cooking oil
  • 2 large onion, peeled and sliced
  • 2 small leek, trimmed, washed and finely chopped 
  • 500 grams long-gram rice
  • 1 teaspoon turmeric 
  • 400 grams tomatoes
  • 4 tablespoons chopped parsley
  • 600 ml chicken stock  
  • 200 grams mushrooms, wiped and sliced
  • 200 grams frozen peas

Garnish

  • Sliced tomatoes 
  • Flat-leaf parsley sprigs
