TURKEY NUT LOAF

Preparation Method :
- Blend all the ingredients together with plenty of salt and pepper. Spoon the mixture into a well-greased loaf tin and cover with greased foil.
- Bake in a preheated moderate oven for 1½ hours.
- Cool in the tin for 30 minutes, then turn out and allow to become quite cold.
- Arrange some of the apricot halves over the top of the loaf.
- Any left over can be added to a salad to serve with the loaf. Place the olives on the top edges of the loaf.
- Garnish with lettuce.
INGREDIENTS
- 2 medium onions, peeled and finely chopped
- 150 grams shelled walnuts, chopped
- 1 kilogram raw turkey meat, minced
- 200 grams whole meal breadcrumbs
- 2 tablespoons Worcestershire sauce
- 1 teaspoon chopped fresh mixed herbs
- 2 tablespoons chopped parsley
- 2 eggs
- Salt
- Freshly ground black pepper
Garnish
- 500 grams unsweetened apricot halves, drained stuffed olives, sliced
- Lettuce leaves
