TURKEY ESCALOPES WITH DAMSONS

Preparation Method :
- Bat out the turkey slices with a rolling pin or meat mallet until about 2.5 cm thick.
- Place in a large shallow dish and pour over the apple juice, soy sauce, sherry, garlic and thyme. Cover and leave in the refrigerator to marinate for 3 - 4 hours or overnight.
- Remove the turkey from the marinade, reserving the marinade. Heat the butter and oil in a large frying par and quickly fry the turkey until browned on both side Add the damsons or plums, reserved marinade and pepper to taste.
- Cover and simmer gently for 10 - 15 minutes, until tender, stirring occasionally.
- Serve with green beans and boiled or mashed potatoes.
INGREDIENTS
- 2 turkey breast fillets, each weighing about 225 grams, skinned and cut width ways into 5 cm slices
- 75 ml unsweetened apple juice
- 45 ml soy sauce
- 45 ml dry sherry
- 1 small garlic clove, skinned and crushed
- 5 ml chopped fresh thyme or 1.25 ml dried thyme
- 15 grams butter
- 15 ml Cooking oil
- 250 grams damsons or plums, halved and stoned
- Pepper
