Preparation Method :
- Place the apricots in a bowl. Just cover with water and add the ground ginger. Leave the apricots to stand overnight.
- Place the turkey fillets on the grid of a grill pan and spoon over a little of the apricot soaking liquid.
- Put under a hot grill for about 10 minutes, turning once. If necessary, spoon over more apricot liquid.
- Meanwhile, simmer the apricots in the rest of the soaking liquid for about 10 minutes.
- Pour the cooked apricots into a blender and liquidize them until smooth.
- Place the cooked turkey fillets on a heated serving dish and pour the apricot sauce over.
- Serve with green beans.
