DUCK VINDALOO

Preparation Method :

  • Pour the blended mixture over duck pieces; stir well. Cover; refrigerate for several hours, turning occasionally.
  • Remove duck from mixture; reserve mixture. Heat ghee in large frying pan; add duck to pan. Cook until duck is browned all over.
  • Stir in the reserved mixture; bring to boil. Reduce heat; cover, simmer for about 20 - 30 minutes or until tender.

INGREDIENTS

  • 2.5 kgs duck, cut into serving-sized pieces
  • 50 grams ghee
  • Ground to Smooth Paste
  • 1 tablespoon chopped fresh ginger
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander seeds
  • Salt, to taste
  • ½ teaspoon cardamom seeds
  • 5 - 6 small fresh red chillies, seeded
  • 3 cloves garlics, crushed
  • 150 ml brown vinegar  
  • 1 teaspoon fenugreek seeds
  • ½ teaspoon ground turmeric
  • 1 teaspoon sugar
