- Heat oil in a saucepan. Add the onion and garlic and cook gently for about 3-5 minutes or until soft.
- Add to the mashed sweet potato and season with the nutmeg, salt and pepper. Stir together until mixed thoroughly. Leave to cool.
- Shape the mixture into 4 oval potato patties. Dip first in the beaten egg, then coat in the polenta. Refrigerate at least for half an hour.
- Heat the oil in a frying pan and cook the potato cakes for about 5 minutes on each side.
INGREDIENTS
- 750 grams sweet potatoes, peeled and cut into large chunks, steamed, drained and mashed
- 1 onion, peeled and chopped
- 1 garlic clove, peeled and crushed
- Pinch of freshly grated nutmeg
- Salt and freshly ground black pepper, to taste
- 1 medium egg, beaten
- 50 grams quick-cook polenta
- 100 ml IDHAYAM sesame oil
