POTATO QUESADILLA WITH GUACAMOLE

Preparation Method :
- Boil, steam or microwave potato until tender; drain, slice.
- Combine sausage, tomatoes and shallots in pan, cook, stirring, about 5 minutes or until slightly thickened. Stir in potato.
- Dip each tortilla quickly into large bowl of very hot water, place on tea-towel.
- Divide potato filling between tortillas, top with cheese, brush edges with egg white, fold over to enclose filling; press firmly to seal.
- Place on greased oven trays, brush with oil, bake in moderately hot oven about 20 minutes or until browned and puffed.
- Serve with guacamole.
Guacamole:
- Blend or process all ingredients until smooth.

- 300 grams Potato, peeled, quartered
- 100 grams chorizo sausage, chopped
- 500 grams tomatoes, peeled, chopped
- 3 green shallots, chopped
- 6 x 16cm round tortillas
- 150 grams grated tasty cheddar cheese
- 1 egg white, lightly beaten
- 1 tablespoon Peanut oil
GUACAMOLE
- 350 grams avocado
- 150 ml sour cream
- 1 tablespoon lemon juice
- 1 tablespoon mild sweet chili sauce
