POTATO CAKES WITH SWEET PEPPERS

Preparation Method :
- Boil, steam or microwave potatoes until tender, rinse under cold water; drain, mash.
- Combine mashed potato, egg yolks, coriander, shallots, cheeses, sambal oelek and garlic in bowl; mix well.
- Using floured hands, shape mixture into 8 patties; roll patties in flour, shake away excess flour.
- Heat oil in pan, add patties, cook until browned on both sides.
- Serve with sweet peppers.
Sweet Peppers:
- Heat oil in pan, add onion and sugar, cook, stirring, until onion is browned.
- Quarter peppers, remove seeds and membranes, grill peppers, skin side up, until skin blisters and blackens; peel skin away.
- Cut peppers into thin strips. Combine onion, peppers, vinegar and herbs in bowl; cover, refrigerate.

- 500 grams Old potatoes, peeled, chopped

- 2 tablespoons chopped fresh coriander
- 4 green shallots, chopped
- 50 grams grated parmesan cheese
- 50 grams grated tasty Cheddar cheese
- ½ teaspoon sambal oelek
- 1 clove garlic, crushed plain flour
- 2 tablespoons Sesame oil
Sweet Peppers
- 1 tablespoon Peanut oil
- 100 grams Onion, sliced
- 2 teaspoons sugar
- 300 grams red peppers
- 2 teaspoons balsamic vinegar
- 1 teaspoon chopped fresh thyme
- 1 teaspoon chopped fresh oregano
