Preparation Method :
- Combine grated potatoes and onion. Place in a large sieve and squeeze out all excess liquid.
- Put the potato and onion mixture into a mixing bowl. Mix in half the chopped ham and season well with salt and pepper. Divide into 4-6 equal portions and shape into rounds.
- Heat half of the butter in a large frying pan. Cook ham and potato cakes over medium heat for about 7-8 minutes on each side or until golden and cooked through.
- Heat the remaining butter in a clean saucepan. Stir-fry breadcrumbs for about 5-7 minutes over low heat or until crisp and golden. Remove from heat.
- Add the remaining chopped ham, parsley and grated cheese to fried breadcrumbs. Spoon the mixture equally over the top of each potato cake. Serve immediately.

- 550 grams potatoes, peeled, grated
- 100 grams cooked ham, sliced and chopped
- 75 grams tablespoon butter
- 150 grams onion, finely chopped
- 1 tablespoon finely chopped parsley
- 25 grams cheddar cheese, grated
- 50 grams fresh white breadcrumbs
- Ground black pepper and salt to taste
