FRIED POTATO AND SAGO CAKES

Preparation Method :
- Mix all the ingredients together except the oil and divide the mixture equally into lemon-sized balls.
- Heat the oil in a wok; flatten each ball lightly between the palms and fry, a few at a time, till golden.
- Remove with a slotted spoon and drain the excess oil on paper towels. Repeat till all the balls are fried.
- Serve hot with mint chutney.
INGREDIENTS
- 550 grams Potatoes, boiled, mashed
- 60 grams Groundnuts, coarsely pounded
- 75 grams Sago, soaked for 10-15 minutes, drained
- 2 tablespoon, Fresh coriander leaves, finely chopped
- 1" Ginger, chopped
- 3-4 Green chillies, chopped
- Juice of 1 Lemon
- Salt to taste
- IDHAYAM MANTRA peanut oil for deep frying
