Preparation Method :
- Boil, steam or microwave potatoes until tender; drain, mash well, cool 10 minutes.
- Heat oil in pan, add onion and pepper.
- Cook, stirring, until onion is soft; cool.
- Combine potato, onion mixture, egg yolk cheese and cornmeal in bowl; mix well. Gradually stir in water.
- Divide mixture into 8 portions, shape into patties, toss in flour, shake away excess flour.
- Dip patties in lightly beaten egg white, roll in extra cornmeal, refrigerate; minutes.
- Heat oil in pan, add patties in batches, shallow-fry until golden brown on both sides; drain on absorbent paper.

- 500 grams old potatoes, peeled, chopped
- 1 tablespoon Sesame oil
- 100 grams onion, finely chopped
- 20 grams bottled jalapeno pepper, seeded, finely chopped
- 1 egg, separated
- 100 grams grated tasty cheddar cheese
- 150 grams cornmeal
- 100 ml water
- 50 grams plain flour
- 50 grams cornmeal, extra
- Peanut oil for shallow-frying
