BUBBLE AND SQUEAK WITH BACON

Preparation Method :
- Combine mashed potatoes, cabbage and butter. Season with the worcestershire sauce, salt and pepper. Set aside.
- Heat olive oil in a large frying pan. Sauté onion and bacon until onion is golden brown and bacon, crisp.
- Stir in minced garlic. Add potato mixture and mix well. Pat into a cake and fry for about 3-5 minutes or until the bottom of cake is brown and crisp.
- Invert potato cake onto a flat plate, slide back into the pan to cook the other side for another 3 minutes. Sprinkle with finely chopped parsley to serve.

- 1 kg potatoes, cooked, peeled and mashed
- 500 grams cabbage, cooked and coarsely chopped
- 100 grams lean, streaky bacon, coarsely chopped
- 50 grams, butter, cut into small cubes
- 50 ml olive oil
- 1 spanish onion, peeled and finely chopped
- 2 cloves garlic, peeled and minced
- 1 teaspoon worcestershire sauce
- Ground black pepper and salt to taste
- Finely chopped fresh parsley
