BAKED POTATO SKINS

Preparation Method :
- Scrub potatoes well, brush with half the oil, bake in hot oven about 50 minutes or until tender, cool.
- Cut each potato into 6 wedges, carefully scoop out flesh, leaving skins intact (reserve potato flesh for another use).
- Place potato skins in single layer on wire rack over oven tray, skin side up, brush with remaining oil, sprinkle with combined salt, pepper and rosemary.
- Just before serving, bake in hot oven about 30 minutes or until crisp.
- Serve hot with sour cream.

- 1 kg Old Potatoes
- 2 tablespoons Peanut oil
- 2 teaspoons fine sea salt
- 1 teaspoon seasoned pepper
- 2 teaspoons chopped fresh rosemary
- 300 ml sour cream
