BAKED POTATO SKINS

Makes :

Preparation Time :
20 minutes

Cooking Time :
1 hour 30 minutes

Preparation Method :

  • Scrub potatoes well, brush with half the oil, bake in hot oven about 50 minutes or until tender, cool.
  • Cut each potato into 6 wedges, carefully scoop out flesh, leaving skins intact (reserve potato flesh for another use).
  • Place potato skins in single layer on wire rack over oven tray, skin side up, brush with remaining oil, sprinkle with combined salt, pepper and rosemary.
  • Just before serving, bake in hot oven about 30 minutes or until crisp.
  • Serve hot with sour cream.

 

INGREDIENTS

  • 1 kg Old Potatoes
  • 2 tablespoons Peanut oil
  • 2 teaspoons fine sea salt
  • 1 teaspoon seasoned pepper
  • 2 teaspoons chopped fresh rosemary
  • 300 ml sour cream
