BACON AND CHIVE POTATO PATTIES

Preparation Method :
- Remove bacon fat from bacon, chop bacon finely. Coarsely grate potatoes, press between layers of absorbent paper to remove as much moisture as possible.
- Combine bacon, potatoes, chives and sour cream in bowl; mix well.
- Divide mixture into 8 portions, shape into 8cm patties.
- Heat oil in heavy-based pan, add patties in batches, cook until browned on both sides.
- Place patties in a single layer on oven tray, bake, uncovered, in moderate oven about 20 minutes or until cooked through.

- 3 bacon rashers
- 750 grams old potatoes, peeled
- 50 grams chopped fresh chives
- 150ml sour cream
- 100 ml Peanut oil
