SWEET POTATOES WITH PEAR AND CURRANTS

Preparation Method :
- Boil, steam or microwave Sweet potatoes until just tender; drain, rinse under cold water, drain.
- Heat butter in pan, add onion, rind and juice, cook, stirring, until onion is soft.
- Add stock, berries, cinnamon, pear, currants and honey, cook, stirring, about 8 minutes or until pear is tender.
- Gently stir Sweet potatoes into onion mixture, stir until heated through.
- Serve sprinkled with parsley and nuts.
INGREDIENTS
- 1.5 kg Sweet potatoes, peeled, chopped
- 100 grams butter
- 200 grams onion, finely chopped
- 1 teaspoon grated orange rind
- 100 ml orange juice
- 200 ml chicken stock
- 6 dried juniper berries
- 1 teaspoon ground cinnamon
- 350 grams pear, peeled, cored, chopped
- 50 grams dried currants
- 1 tablespoon honey
- 2 tablespoons chopped fresh parsley
- 2 tablespoons chopped roasted pecans
