POTATO CAKES WITH OLIVE PASTE AND RED PEPPER

Preparation Method :
- Quarter pepper, remove seeds and membranes.
- Grill pepper, skin side up, until skin blisters and blackens.
- Cool about 10 minutes; peel away skin, cut pepper into strips.
- Coarsely grate potatoes, press between layers of absorbent paper to remove as much moisture as possible.
- Combine potatoes, onion, flour and eggs in bowl; mix well.
- Divide mixture into 8 portions, shape into 8 cm cakes.
- Heat oil in heavy-based pan, add cakes in batches, cook until browned on both sides.
- Place cakes on oven tray, bake in moderate oven about 20 minutes or until cooked through.
- Serve cakes with sliced cheese, olive paste and strips of roasted red pepper.

- 250 grams red pepper
- 750 grams old potatoes, peeled
- 100 grams onion, grated
- 75 grams Self-Raising flour
- 2 eggs, lightly beaten
- 100 ml IDHAYAM MANTRA Peanut oil
- 180 grams smoked cheese
- 2 tablespoons bottled black olive paste
