POTATO AND SWEET POTATOES GRATIN

Preparation Method :
- Grease 4 shallow ovenproof dishes (1 1/3 cup/330 ml capacity).
- Cut potatoes and Sweet potatoes into 5 mm slices.
- Boil, steam or microwave potatoes and Sweet potatoes separately until just tender; drain, cool.
- Heat butter in pan, add flour, stir over heat until bubbly.
- Remove from heat, gradually stir in milk and stock, return to heat, stir until sauce boils and thickens.
- Stir in cheese and mustard.
- Layer half the potato and Sweet potatoes slices into prepared dishes.
- Pour over half the sauce. Repeat with remaining potato, Sweet potatoes and sauce.
- Top each dish with extra cheese, nuts and paprika.
- Bake, uncovered, in moderate oven about 20 minutes or until heated through.

- 750 grams potatoes, peeled
- 500 grams Sweet potatoes, peeled
- 100 grams butter
- 50 grams plain flour
- 350 ml milk
- 150 ml chicken stock
- 50 grams grated Swiss cheese
- 2 teaspoons French mustard
- 50 grams grated Swiss cheese, extra
- 2 tablespoons almonds flakes
- ¼ teaspoon paprika
