- Heat butter in large pan, add onion, cook, stirring, until onion is soft.
- Add potatoes, garlic, stock and mustard, simmer, covered, about 20 minutes or until potatoes are tender.
- Add cream and spinach, simmer, covered, until spinach is just wilted.

- 50 grams butter
- 150 grams onion, finely chopped
- 1 kg new baby potatoes, halved
- 1 clove garlic, crushed
- 250 ml chicken stock
- 2 teaspoons seeded mustard
- 1 tablespoon cream
- 350 grams English spinach, roughly chopped
