Basic Mashed Potato
- Peel potatoes and cut each into 4 even pieces.
- Boil, steam or microwave potatoes until tender; drain, mash well with potato masher or fork, or push potato through a sieve.
- Add butter, milk and sugar, beat until butter is melted.
MASHED POTATO VARIATIONS
- Add Mashed potatoes with any of the following variations
Leek and Thyme
- Heat oil in pan, add leek, garlic and thyme, cook, stirring, until leek is soft.
- Add wine, cook, stirring, until wine is evaporated; stir leek mixture into mashed potato.
Cajun
- Add pepper, spice mix and thyme to mashed potato; mix well.
Italian
- Add cheese, olives and basil to mashed potato; mix well.
Pine Nut
- Add pine nuts and rosemary to mashed potato; mix well.
Bacon And Mustard
- Cook bacon in pan until crisp; drain on absorbent paper.
- Add bacon, mustard and parsley to mashed potato; mix well.
Thai-Style
- Substitute coconut cream for milk in basic mashed potato recipe.
- Heat oil in pan, add onion, garlic, chili and ginger, cook, stirring, until onion is soft.
- Add to mashed potato with coriander; mix well.

Basic Mashed Potato
- 750 grams old potatoes
- 50 grams butter
- 50 ml milk
- 1 teaspoon sugar
Leek and Thyme
- 1 tablespoon Peanut oil
- 200 grams leek, sliced
- 1 clove garlic, crushed
- 1 tablespoon chopped fresh thyme
- 2 tablespoons dry white wine
Cajun
- 150 grams red pepper, roasted, sliced
- ½ teaspoon Cajun blended spice mix
- 1 teaspoon chopped fresh thyme
Italian
- 25 grams grated parmesan cheese
- 50 grams sliced seedless black olives
- 1 tablespoon chopped fresh basil
Pine Nut
- 50 grams pine nuts, toasted
- 2 teaspoons chopped fresh rosemary
Bacon And Mustard
- 4 bacon rashers, chopped
- 3 teaspoons seeded mustard
- 1 tablespoon chopped fresh parsley
Thai-Style
- 75 ml coconut cream
- 1 tablespoon Peanut oil
- 100 grams onion, chopped
- 1 clove garlic, crushed
- 1 small chopped fresh chili
- 1 teaspoon grated fresh ginger
- 1 tablespoon chopped fresh coriander
