PrintGRATIN OF FENNEL AND POTATO

Preparation Method :
- Heat oil in pan, add leek, fennel and garlic, cook, stirring, until leek and fennel are soft.
- Place potatoes over base of shallow ovenproof dish (1.5 litre/6 cup capacity), top with leek and fennel mixture, pour over cream.
- Sprinkle topping over cream, bake, uncovered, in moderate oven about 1 hour or until topping is browned and potatoes are tender.
Topping:
- Combine all ingredients in bowl; mix well.
INGREDIENTS
- 2 tablespoons Peanut oil
- 350 grams leek, sliced
- 500 grams fennel bulb, thinly sliced
- 2 cloves garlic, crushed
- 500 grams old potatoes, peeled, thinly sliced
- 250 ml cream
Topping:
- 100 grams stale breadcrumbs
- 50 grams grated parmesan cheese
- 50 grams butter, melted
