GLASS NOODLES WITH POTATO CUBES AND MINCED BEEF

Preparation Method :
- Drain the potatoes and pat dry on absorbent paper to remove excess moisture.
- Heat the oil in a wok and fry potatoes until golden brown, remove and drain. Set aside.
- Heat a spoonful of oil in wok and stir-fry onion until golden brown.
- Add minced beef and stir-fry for 3-5 minutes.
- Return fried potatoes to wok and add glass noodles in batches. Mix well.
- Add dark soy sauce mixture and toss thoroughly.
- Finally add in the beef stock with sugar, salt and pepper.
- Mix well over medium heat until noodles are cooked. Serve hot.
INGREDIENTS
- 250 grams potatoes, peeled, diced and soaked in water
- 150 grams Tang Hoon (glass noodles), soaked in warm water to soften and drained
- 150 grams minced beef
- 50 ml cooking oil
- 1 onion, peeled and diced
- 1 tablespoon dark soy sauce
- 50 ml water
- 5 tablespoon beef stock
- ½ teaspoon sugar
- A pinch of salt
- ½ teaspoon ground white pepper
