Preparation Method :
- Cut potatoes into 8 mm slices, then into 8mm strips or finer, if you prefer.
- Place chips in large bowl, cover with water, stand 30 minutes; drain.
- Dry chips thoroughly with clean tea- towel before frying.
- Heat enough oil in deep frying pan to come halfway up side of pan.
- Add chips gradually in batches, so oil will not spatter.
- Cook for a few minutes or until chips barely change colour; drain well on absorbent paper.
- Reheat oil, fry chips again in batches until lightly browned.
- Drain well on absorbent paper, serve immediately.

- 1.5 kg old potatoes, peeled
- Peanut oil for deep-frying
