BAKED POTATOES WITH BOLOGNESE TOPPING

Serves :

Preparation Time :
20 minutes

Cooking Time :
45 minutes

Preparation Method :

  • Scrub potatoes well.
  • Pierce skin in several places with fork or skewer.
  • Place potatoes onto oven shelves.
  • Bake in moderately hot oven about 1 hour or until tender.
  • Serve with topping of your choice.

Bolognese Topping

 

  • Add mince, stirring over high heat until mince is browned.
  • Add undrained crushed tomatoes, paste and herbs, simmer, covered about 20 minutes or until mince is tender and mixture thickens slightly.
  • Add beans, stirring, until hot.
  •  Divide between potatoes, top with cheese.

 

INGREDIENTS

  • 1.5 kg Old Potatoes

Bolognese Topping

  • 1 tablespoon Peanut oil
  • 150 grams onion, chopped
  • 1 clove garlic, crushed
  • 350 grams minced beef
  • 500 grams can tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon chopped fresh basil
  • 1 teaspoon chopped fresh oregano
  • 100 grams canned red kidney beans, rinsed, drained
  • 50 grams grated mozzarella cheese
