BAKED POTATOES WITH ASPARAGUS TOPPING

Preparation Method :
- Scrub potatoes well.
- Pierce skin in several places with fork or skewer.
- Place potatoes onto oven shelves.
- Bake in moderately hot oven about 1 hour or until tender.
- Serve with Asparagus and Cheese Sauce topping.
Asparagus and Cheese Sauce
- Cut asparagus into 4cm lengths; boil steam or microwave until tender.
- Heat butter in pan add flour, stir over heat until mixture is bubbly.
- Remove from heat, gradually stir in milk, stir over heat until mixture boils and thickens. Remove from heat, stir in cheese.
- Divide asparagus between potatoes, top with cheese sauce and sprinkle with nuts.

- 1.5 kg Old Potatoes
Asparagus and Cheese Sauce
- 1 bunch fresh asparagus
- 50 grams butter
- 2 tablespoons plain flour
- 500 ml milk
- 150 grams grated tasty Cheddar cheese
- 20 grams flaked almonds, toasted
