BAKED ANCHOVY WITH POTATOES

Preparation Method :
- Wash, scrub and dry potatoes.
- Place potatoes and whole garlic bulb on oven tray.
- Bake in moderately hot oven about 1 hour or until potatoes are tender.
- Quarter pepper, remove seeds and membranes.
- Grill pepper, skin side up, until skin blisters and blackens.
- Peel away skin, finely chop pepper.
- Cut top off potatoes, carefully scoop out flesh, leaving skin intact, place flesh in bowl.
- Cut garlic in half, squeeze garlic into bowl with potato flesh, stir in pepper, anchovies, finely chopped tomato, cream and oregano.
- Spoon potato mixture back into potato shells; place on oven tray.
- Cut cheese into 4 pieces, place a piece on each potato.
- Bake in moderately hot oven about 10 minutes or until cheese is melted and potatoes heated through.

- 1.5kg old potatoes
- 100 grams bulb garlic
- 150 grams red pepper
- 50 grams can anchovy fillets, drained, chopped
- 100 grams tomato, peeled, seeded
- 1 tablespoon sour cream
- 2 teaspoons chopped fresh oregano
- 100 grams blue vein cheese
