SWEET POTATOES WITH ORANGE CREAM

Preparation Method :
- Push Sweet potatoes through a fine sieve.
- Whisk sugar, egg, egg yolks, spice and rind in bowl until combined.
- Whisk in Sweet potatoes and cream.
- Divide mixture evenly between 4 ovenproof dishes ( 2/3 cup/ 160 ml capacity).
- Place dishes in baking dish with enough boiling water to come halfway up sides of ovenproof dishes.
- Bake, uncovered, in moderate oven about 1 hour or until knife comes out clean when inserted into centre of custards; cool, refrigerate until cold.
- Serve Sweet potatoes custards with orange cream, dates and orange segramsents; dust with sifted icing sugar, if desired.
Orange Cream:
- Combine all ingredients in bowl; mix well.
INGREDIENTS
- 500 grams cold mashed Sweet potatoes
- 75 grams caster sugar
- 2 egg yolks
- ½ teaspoon mixed spice
- ½ teaspoon grated orange rind
- 150 ml cream
- 8 fresh dates, seeded, halved
- 350 grams oranges, segramsented
Orange Cream:
- 125 ml sour cream
- 2 teaspoons Grand Marnier
- 2 teaspoons icing sugar mixtures
