SWEET POTATOES AND ZUCCHINI LOAF

Preparation Method :
- Grease 15cm x 25cm loaf pan, cover base with baking paper.
- Whisk eggs, sugar, milk and butter in bowl until combined.
- Stir in vegetables, dates and nuts.
- Stir in sifted dry ingredients in 2 batches. Spread mixture into prepared pan.
- Bake in moderate oven about 1 hour and 10 minutes.
- Turn loaf onto wire rack to cool. Serve loaf with butter, if desired.

- 200 grams firmly packed brown sugar
- 150 ml buttermilk
- 150 grams butter, melted
- 100 grams grated zucchini
- 150 grams grated Sweet potatoes
- 100 grams dates, finely chopped
- 50 grams pecans, chopped
- 120 grams whole meal plain flour
- 250 grams white self-Raising flour
- 100 grams white plain flour
- 1 teaspoon mixed spice
- 1 teaspoon ground cinnamon
