ROAST SWEET POTATOES, PEANUT AND RAISIN LOAF

Preparation Method :

  • Grease base and sides of 15 cm x 25cm loaf pan, cover base with baking paper.
  • Using a skewer, prick Sweet potatoes several times, place on oven tray.
  • Bake in moderate oven about 1 hour or until tender; cool 15 minutes.
  • Peel and mash Sweet potatoes; cool.
  • You will need 1 cup mashed Sweet potatoes for this recipe.
  • Sift flour, soda, spice and nutmeg into bowl; stir in ginger, raisins and sugar.
  • Stir in oil, essence, eggs, juice and Sweet potatoes; mix well.
  • Spoon mixture into prepared pan, sprinkle with nuts.
  • Bake in moderate oven about 1 hour.
  • Stand loaf in pan 10 minutes before turning onto wire rack to cool.

 

INGREDIENTS

  • 500 grams Sweet potatoes
  • 250 grams plain flour
  • 1 teaspoon bicarbonate of soda
  • 2 teaspoons mixed spice
  • ½ teaspoon ground nutmeg
  • 1 tablespoon finely chopped glace ginger
  • 150 grams raisins, chopped
  • 250 grams caster sugar
  • 150 ml peanut oil
  • 1 teaspoon vanilla essence
  • 2 eggs, lightly beaten
  • 50 ml orange juice
  • 2 tablespoons roasted unsalted peanuts, chopped
