- Grease 15 cm x 25 cm loaf pan.
- Push mashed potato through a sieve. Combine potato, coconut and sifted icing sugar in large bowl, beat with electric mixer until combined; add Copha and firmly beaten egg whites, beat until well combined.
- Add 2 teaspoons grated orange rind to potato mixture.
- Press half the mixture over base of prepared pan.
- Add 50 grams melted dark chocolate to remaining mixture; press evenly over white mixture. Refrigerate until set.

- 300 grams coconut
- 500 grams icing sugar mixture
- 75 grams Copha, melted
- 2 egg whites
- 2 teaspoons grated orange rind
